South Tyrolean Christmas Stollen: recipe

Ingredients:
– 500 g flour – 2 eggs
– 1 packet of vanilla sugar – 150 g butter
– 1 tip of cardamon – 250 g fat free ricotta cheese
– 40 g diced candied oranges – 200 g sugar
– 40 g diced candied lemons – 125 g grated hazelnuts
– 125 g raisins
Preparation
Mix all ingredients except butter, ricotta and eggs. Form a heap and a mold in which you put the 2 eggs, ricotta and butter and knead well. Form a long roll and put it on a buttered baking tray. Bake for about 40 minutes at 160° in the pre-heated oven. Still hot, cover with melted butter and icing sugar. Pack in aluminum and keep cool for 3 weeks.
